Gorgonzola
(Cow's milk, Italy)
There are two types of Gorgonzola: Piccante is aged longer and has a stronger flavor and firmer texture and Dolce is softer and spreadable, with more sweetness. The lovely greenish-blue veining is more plentiful in Piccante, giving it a slightly more attractive look. Both are delicious alone on bread but the moist consistency makes it a blue cheese ideal for cooking.
