Pecorino
(Sheep's milk, Italy)
Pecorino is simply a generic term for any Italian cheese made with sheep's milk. All share a similarly rich, nutty and olivey flavor, however, every pecorino has additional flavor qualities that make it uniquely delicious. The only way to discover which one you like the best is to sample as many as possible! Two we recommend are Pecorino Toscano, made in Tuscany, and Pecorino Foglie di Noci, aged in walnut leaves.
