In the world of fromage, the French Pyrénées means one thing: delicious sheep's milk cheese. Many of the raw milk, artisanal cheeses in the Basque region are made according to A.O.C. rules under the name "Ossau-Iraty Brebis Pyrénées." Made from pasteurized milk in larger factories, Etorki is not one of the A.O.C cheeses, but many a cheese snob has been fooled by its irresistibly rich texture and olivey, salty, fruity flavor. Simply put, it is delicious.
