The dense, chalk-like texture of this golfball-sized cheese is both delicate and satisfying. The flavor is slightly lemony and spicy. Everything about this cheese, from the name to the shape to the flavor, is unique.
Cheesemaking began at Capriole Farm in 1988 and grew naturally from Judy Schad's love of “fresh, simple food.”
