From the Loire Valley, the shape of this cheese resembles a pyramid with its top lopped off. It supposedly got this shape when French cheesemakers became fearful a pyramid would remind Napoleon of his failed campaign in Egypt. Clean, tangy and rich, it is quintessential Loire Valley Chèvre.
