(Goat's milk, France)

Shaped like a disc, this Loire Valley Chèvre is especially easy to cut into on a cheese plate. The interior is soft and stark white, contrasting beautifully with the dark, ashed exterior. Slightly sweet and tangy with a mild goaty flavor.
