Sainte Maure de Touraine
(Goat's milk, France)
Log-shaped Sainte Maure is pierced by a straw holding the cheese together and encouraging ripening. This is a full-flavored Loire Valley Chèvre, soft and sometimes runny around the edges, with a rich, nutty and slightly tart flavor.
