Crottin de Chavignol
(Goat's milk, France)
Made east of the Loire Valley, the Crottin shares a few similarities with Loire Valley Chèvre, namely a clean, tangy flavor. The texture, however, is usually a bit firmer and the flavor a bit nuttier.
