Chabichou du Poitou
(Goat's milk, France)
Chabichou is immensely satisfying. It has the tangy, clean flavor you expect from French chèvre but the soft texture is a little more dense and chewier and the flavor sometimes a bit earthier and nuttier. The rind is not ashed and has a textured, light beige appearance. There are several equally terrific variations of this cylinder-shaped cheese. One we often carry is Le Chevrot.
