Comté
(Cow's milk, France)
Made in Franche-Comté, bordering Switzerland, this raw milk cheese has a bit of that distinctive Swiss flavor to it. Nutty with a sharp fruitiness, Comté is a great snack with fruit or salami and because of its melting qualities, recommended for quiche, soup or fondue.
