Peluso Teleme
(Cow's milk, Peluso Dairy, Maine )
Teleme is a Mediterranean cheese. It has no rind and the thick, molten paste must be scooped up with a crusty piece of bread. The flavor is yeasty, with a pleasant bitterness and the same fruity quality as a mild Jack. It is unique, easy to cook with, and while somewhat of an acquired taste, is surprisingly addictive.
Until recently, Peluso Dairy was located in California. Now they are making the same delicious cheese in Maine
