Peluso Teleme (Cow's milk, Peluso Dairy, Maine ) Teleme is a Mediterranean cheese. It has no rind and the thick, molten paste must be scooped up with a crusty piece of bread. The flavor is yeasty, with a pleasant bitterness and the same fruity quality as a mild Jack. It is unique, easy to cook with, and while somewhat of an acquired taste, is surprisingly addictive.
