Red Hawk
(Cow's milk, Cowgirl Creamery, California)
This is a triple-crème with attitude. Regular washings in brine give the cheese a supple, rather than buttery, texture and color the soft rind a beautiful reddish-orange. Slightly stinky, slightly pungent and extremely flavorful, this cheese has cult-like following in California.
Cowgirl Creamery is owned by Sue Conley and Peggy Smith, who both had successful careers as Bay Area Chefs before delving into full-time cheesemaking in the nineties. All of their cheeses are made in a renovated barn in Point Reyes Station using organic milk produced by Straus Family Dairy.
