Pleasant Ridge Reserve
(Cow's milk, Uplands Cheese, Wisconsin )

Pleasant Ridge Reserve won Best in Show at the American Cheese Society's annual competition in 2001, and proved four years later it wasn’t a fluke when they won the same title again. The cows munch on clovers and herbs, which can be subtly detected under the cheese's sweet, nutty flavor. The cheese is aged at least six months, but it’s worth trying an older wheel, when the flavors are more pronounced.
